Look no further than the magical cauliflower.
While one look at this vegetable might lead you to believe that it is broccoli’s albino and long lost cousin, cauliflower is so much more than just that. It is low in calories, contains B vitamins, vitamin C, antioxidants, and has been known as an anti-inflammatory. To top it all off, the cauliflower is incredibly versatile and can be thrown into many recipes, including those that are typically known as being starchier or heavier on the stomach.
These common recipes range anywhere from mashed potatoes, to rice, and even bread.
- Instead of potatoes, take a big head of cauliflower, steam it, mash it up, add a dab of Earth Balance vegan butter, and there you go! Season as you like for all the flavor without all the calories.
