Being a Frank’s Red Hot fanatic, anything that starts with “buffalo” automatically catches our attention. This twist on the class fettuccine really speaks to us. For one, it is chock full of spicy goodness and the dish can be on the table in 30 minutes flat (which is perfect for our Bite Size life). Lauren says that this dish isn’t much healthier than the classic, but we have to disagree. There is no heavy cream to be found on the ingredient list and the creamy texture comes from low fat sour cream and blue cheese crumbles that you can add as you see fit.

Seriously obsessed.

Here is what you will need to get the flavor perfection on your plate:

  • 3/4 lb. fettuccine pasta
  • 3 tablespoons butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 lb. boneless skinless chicken breasts cut into bite sized pieces
  • 1/2 cup hot sauce {such as Frank’s Red Hot}
  • 1 cup low fat sour cream
  • 1/4 cup blue cheese crumbles + more for garnish
  • salt and pepper, to taste
  • 2 tablespoons chopped cilantro
