Bytes for Breakfast: Healthy Dressing + Balsamic Scramble

Ever commit to a “salad diet” and watch the scale stay put? Many bowls of greens actually pack in more calories than other menu items because of our addiction to dressing. I became accustomed to always ordering my salad “naked” with the dressing on the side and dipping my fork in for a bit of flavor without all of the calories. But now I am a huge advocate of balsamic vinegar…and not the vinaigrette mixture you are thinking of.

The Doctors share the benefits of dressing your salad the healthy way with flavored balsamic vinegars and olive oils. Gourmet Blends has a line of flavored balsamic vinegars that will make any blah salad into the bomb. Just to tickle your taste buds, they have balsamic flavors like vanilla fig, raspberry, black current and peach white that you can mix with a dash of their flavored olive oils to make a delicious and healthy dressing.

Not only is balsamic vinegar the new best friend of your salad, but your body benefits too. Balsamic can reduce cholesterol levels, the frequency of your headaches, prevent fatigue and even improve your metabolism because of the active digestive enzyme called pepsin that you can find in balsamic. Plus balsamic vinegar had plenty of antioxidants that can boost your immune system.

I’ve added a lot of flavors to my scrambled eggs with the addition of different herbs, veggies or cheeses, but I would have never thought to add a touch of balsamic vinegar to my breakfast mix. Kajora from Spice Lovely says that the addition of balsamic is one of her favorite ways to eat eggs and she puts them on top of a toasted English muffin. This is so happening in my house.
