Spread the Wellness - Meet Peas & Crayons

We are super excited to share our latest interview for our Spread the Wellness series with Jenn from Peas & Crayons. Not only is Jenn a superstar in the kitchen, she is the brains behind the amazing What I Ate Wednesday series that literally takes over the healthy living community blog-sphere every single Wednesday.

Jenn created Peas & Crayons to fuse together two of her passions: food (specifically vegetables!) and art. You can see both passions shining through in every post. Her recipes are unique. Her camera skills are divine.  And her sense of humor and writing skills keep us coming back for more. Let’s just say there is no stopping the momma-to-be’s veggie loving antics.

Meal you would travel for Living in the middle of nowhere means travel for nearly any meal worth inhaling!  I would say at this moment it would be to NYC for some thin crust pizza, a perfectly made pumpernickel bagel with schmear, and pretty much everything the city has to offer.  I would also devour a coffee shake and fries from Shake Shack.  OMG get in my face!

Best grocery budget tip?  Make a mini meal plan each week or every few days, and a list, and stick to it!  I wind up steering clear from impulse buys when I have a mission and give myself a time limit to shop.  The ZipList application on my phone is a lifesaver!

Biggest cooking pet peeve:  When I under/overestimate cook time and half the meal is ready [and cooling – FAST!] while the other half still needs more time.  I get super antsy.

Favorite spot for recipe inspiration: Usually my fridge!  As ingredients need to be used up I’ll challenge myself to come up with dishes I would have never otherwise thought of in a race to use up all the produce or make use of pantry items that have been neglected for too long.  Other times I’ll leave Food Network playing in the background while I clean and wind up jotting down all the ingredients that grab my attention.  I’ll look at the list afterwards and think of how I can combine the ingredients into a dish!  Usually every time I hear or see quinoa I think “YES! Must make more quinoa!!!!”  I’m clearly a weirdo.

Do you think your baby girl we be a veggie lover?  Heck yes!  I have years of practice convincing friends and family members to eat/love veggies and she’s getting a ton while she’s being held hostage in my tummy.  I’m hoping it’s inevitable =)

Recommended overlooked eat and why? Honestly?  Vegetables!  I think so many American’s think about the carb/protein aspect of their meal first and foremost  leaving vegetables as an afterthought.  It’s my goal as a food blogger to help shift that thinking to put the veggies first and let the other’s fall in to place alongside them.

Do you have an all-time favorite recipe on Peas and Crayons? Oh gosh… I love food too much to pick favorites!  Right now I’d say I’m crushing pretty hard on Savory Stuffed Sweet Potatoes and my Confetti Pasta Salad. I make them on repeat a lot lately now that spring is here!  So yummy!
