Current Obsession: Flax Bread Breakfasts

If you feel like you’re all out of healthy breakfast options, look no further.

We have gone through phases of loving oatmeal, savory scrambles that we run to in the mornings and other times healthy protein pancakes seemingly called our name. One breakfast option you will surely soon fall in love with? Flax bread breakfast toasts!

While my obsession with real bread is surely one for the books, I’ve been experimenting with cutting it out in favor of Mestemacher – a wheat free option. Not only that, but thanks to the flax, it’s full of omega-3s and healthy ingredients that will keep you full and satisfied.

Now, let’s get one thing straight. This will probably not be an option you reach for in times you are craving a roll to go with your soup or salad, but it makes for a great snack or meal option when it’s topped with plenty of other healthy ingredients.

If it’s breakfast inspiration you need, below are some sweet and savory options that are protein-rich and absolutely delicious.

With each of these I usually layer the ingredients on in the order they’re mentioned in. For example, the Almond Butter Flax Bread first gets a hefty dose of almond butter, followed by sliced banana, sliced strawberries and sprinklings of the rest of the ingredients. The same goes for its different iterations.

Now it’s time to gather up the necessary ingredients (which you might already have lying around your kitchen) and make them yourself!

Almond Butter Flax Bread

  • 1 TBSP Almond Butter
  • Banana
  • Strawberries (or berry of choice)
  • 1 tsp Coconut Flakes
  • 1 tsp Chia Seeds
  • 1 tsp Hemp Seeds

Tahini Flax Bread

  • 1 TBSP Tahini
  • Apple Slices
  • 2 Medjool Dates, sliced/diced
  • Maple Syrup Drizzle
  • 1 tsp Chia Seeds
  • 1 tsp Hemp Seeds

Avocado Toast

  • 1 TBSP Hummus
  • 2 Tomato Slices
  • 1 Onion Slice
  • 1/2 Avocado, Sliced
  • Lemon Drizzle
  • Dash of Pepper

Pesto Egg Toast

  • 1 TBSP Spreadable Pesto
  • Scoop of Sautéed Kale
  • 1 Egg (Poached, Sunny Side Up Or Hard Boiled and Sliced)
  • Dash of Cayenne
  • Dash of Pepper
