In honor of Friday being Rice Pudding Day — we have no idea why it exists in the first place, but people are weird — we figured we’d give you a relatively guilt-free recipe (it’s somewhat impossible to have an entirely guilt-free recipe for a dessert with “pudding” in its title). Rice pudding is pretty creamy, there’s no getting around it. In fact, that’s what makes it so delicious. So, how do you up the healthy factor of rice pudding without sacrificing that delicious creaminess? Well, you make it vegan. Coconut milk just became your new best friend. It’s that easy to make this creamy comfort food more waistline-friendly. Here’s what you’ll need:
- 1 cup coconut milk (about half a can)
- 1 cup cooked rice (brown or white)
- 1 tablespoon of honey, agave, or maple syrup
- 1 dash of cinnamon
