Happy Monday! It’s National Eat Your Vegetables Day and we here at BSW are celebrating in a way that would make Popeye proud – with spinach. Creamed spinach is a classic veggie dish that normally makes its rich, gooey presence known around the holidays, but we found a lightened up recipe from Food52 that uses Greek yogurt and absolutely no cream or butter!
Spinach is packed with healthy goodness like calcium, vitamin C, vitamin A, vitamin K, and iron. Serve this light and tasty version with some gnocchi tonight for a quick and delicious vegetarian dinner or as a side at your next summer BBQ. Here’s what you’ll need:
Makes about 2 servings
- 2 tablespoons olive oil
- 1 red chili or jalapeno, diced
- 1 garlic clove, diced
- 1/2 yellow onion, diced
- 1/2 tablespoon tomato paste
- 12 ounces fresh spinach
- 1/2 teaspoon flour
- 1 cup Greek yogurt
