Spring is in reach…at least that is what the sight of pea shoots tells us.
Pea shoots are one of those ingredients that are gaining popularity and we wonder why it took so long for them to catch on. The leaves and tendrils of the pea plant are crisp, refreshing and beautiful. We don’t think a pea shoot bouquet is a weird idea at all. Besides their bright green looks, another appealing aspect of the shoot is that it holds the flavor of an English pea—sweet and grassy in one bite.
Apart from being a fresh and flavorful crunch, pea shoots are rich in nutrients. The nutritious leaf is packed with vitamin A, C and folic acid. The delicious green addition to your diet is low in calories and a simple way to get your vegetable protein in. Pea shoots are a winning green. You will definitely be able to find pea shoots at the farmers’ market, but because of their growing popularity more mainstream stores should have them in stock. If you can’t find them just ask the produce manager when they will be available. And, when they are, pounce! Pea shoot season is fleeting so you want to enjoy them while you can.
Pea shoots are versatile and cook similar to baby spinach which means they are quick to prepare. Yes, we love this! You can eat them raw or use their bright color and fresh flavor to enhance a cooked dish. Here are some recipes that put the spotlight on the soft, leafy green:

- This vegetable soup brings split pea to a whole new level. Warming and GREEN!

I have never had these before which is SHOCKING because I eat everything veggies!! I must jump on the bandwagon! I feel like they could really be easily incorporated into my diet 🙂
