I wouldn’t necessarily call myself a master of the kitchen – but I can certainly get around it and feed myself properly. Come holidays, I like to think I’m an expert at following recipes while take “creative freedoms”, but on the daily, I like to keep it simple and healthy – both traits going hand in hand.
While many people think that eating healthy is complicated and they never quite know what “diet” to follow, my one piece of advice would be to keep meals and ingredients as simple as possible. But that’s not to say that it can’t be delicious.
The other day while I was running low on ingredients in my kitchen (and had absolutely no desire to order out or run to the grocery store), I came up with something truly innovate. Or at least, I thought so.
Instead of chopping everything up and making a simple salad, I stacked them up and created a Portobello Bun Turkey Burger. Here’s what you’ll need:
Ingredients:
- 1 Portobello Mushroom Cap
- 2 TBSP Hummus
- 1-2 Cups Arugula
- 1 TSP Hemp Oil
- Lemon Juice
- 1 Turkey Burger Patty
- 1 Tomato Slice
- 1/2 Avocado
Simple, right?
The first step would be to wash and de-stem the mushroom. You can then choose to grill or bake it for a slightly earthier, nuttier taste. OR, you could also choose to use it as a raw “bun”.
After that’s done, scoop the hummus (I prefer Yorgo’s Organic Garlic Hummus) on the underside of the cap – just as you would any other condiment on a bread bun.
The next step would be to lightly drizzle the hemp oil and lemon juice on the arugula (perhaps with some salt and pepper) to cut the bitterness. After mixing with your hands, place half the arugula on the cap and the other half as a salad. It should be noted that you can use any green, but this is my favorite.
Next would be to grill a patty of your choosing. I chose turkey, but you could also try chicken, a veggie patty, or even beef. Place it on top of the arugula, followed by a slice of tomato and perfectly sliced avocado.
You can then choose to pop it in the oven for a few minutes, covered in tin foil, so all the flavors mesh together or eat it right after.
You can also add or replace whichever ingredients you would like (like topping with cheese) and pair with a salad, sweet potato fries or even just some freshly chopped carrots.
