Romaine and iceberg lettuce, arugula, and spinach are all popular types of greens for salads but cabbage actually makes a great healthier substitute for plain, boring lettuce. Cabbage is rich in nutrients like sulfur, which helps fight infections and cure ulcers. It is also rich in anti oxidants, beta- carotene, and potassium. There are many different varieties of cabbage including Bok Choy (Chinese cabbage), red cabbage, savoy cabbage, and Napa cabbage. Not only can cabbage be eaten raw, but it can be used in soups, stir fries, and cabbage rolls. Most cabbage has a peppery flavor, but it becomes more sweet as you cook it.

I ADORE cabbage! I love it raw a wrap for meats, because it’s very sturdy, and I love it lightly steamed for the same reason – gives it a bit of a different, sweeter flavor! Sadly, if I eat too much, my stomach explodes!
I don’t eat very much regular cabbage, but I love Bok Choy! It is the best with garlic and soy sauce…mmmmmmm!
