“Eat your veggies,” was a common command at my dinner table growing up. I’m sure this command is still used in many households which could be the reason that June 17th was decreed as being “Eat Up All Your Veggies Day.” I always thought that vegetables were supposed to taste bad but now – with years of experience under my belt – I have come to realize that there are ways to cook those veggies to turn them from yuck to yum. In honor of those neglected veggies that have sat on children’s plates over the years here is a list of recipes to help you cook up some delicious veggies. Even though June 17th has come and passed – we think “Eat All Your Veggies Day” is everyday!

This recipe takes (what used to be) regular spinach and adds a little kick to it with the red pepper flakes. The bonus to this dish is the Italian bread, my mouth is just watering by looking at this veggie sandwich. This is a perfect dish to make up for a fast lunch. Plus, it will also be delicious.

I’m going to be honest and admit that I did not even know what argula was until very recently. You might be used to seeing this veggie raw, but it has been combined with some other ingredients to make one delectable soup. Don’t let the green color of it scare you away! This particular recipe has been praised for it being delicious even to non-veggie lovers.
Asparagus Caprese Salad Sandwich (via Trusper)
Is it just me or is this sandwich incredibly beautiful to look at? This recipe requires no bread and gives you some of the veggies that we all need to stay strong. Give it a shot and it may become your new lunch time favorite.

I eat tons and tons of veggies on the regular, so pretty much every day is EAT ALL THE VEGGIES day! LOL!!! I adore spaghetti squash and spinach especially so you better believe I pounded those! 😉
I used to think I hated veggies as a kid because my mom fed them to be steamed. I later in life discovered I adore raw vegetables-which is still how I eat most of mine to this day. Though I also love roasting!
