Thirsty Thursday: 8 Cocktails for the Vernal Equinox

We’ll take just about any excuse to have a glass of vino and unwind. However, not all occasions are created equally. After a seemingly endless winter, spring has officially arrived. While the weather may still not be tropical, per se, the sun is shining a little brighter and our moods have finally been lifting. If you’re looking to have a celebratory dinner or gathering with friends, the perfect compliment would be a spring-y, innovative cocktail (or cocktails)! Here are a few of our favorites that have inspired us to celebrate the Vernal Equinox:

Blue & Spring (via Cosmopolitan)

While this cocktail looks fairly friendly and bright pink, beware. The mix of liquors such as gin, vermouth, and Benedictine packs a powerful punch. Worth it.

Strawberry Rhubarb Fizz (via forkvsspoon)

Lookin’ for something fizzy? We got you. It’s the perfect refresher to make regularly throughout the season. Not only is it delicious and fruity but it also uses ingredients that are in season right now (i.e. rhubarb), which ensures the freshest of ingredients.

Spring Rose Cocktail (via Pink Patisserie)

Named aptly, this spring cocktail is one of the least complicated to make. Only three ingredients (White Lillet Aperitif Wine, Gin, and Grapefruit Juice) are necessary.

Rosemary Peppercorn Lemonade (via Food Republic)

Think of Spring and immediately nostalgic memories of childhood, the outdoors, and mom’s sugary lemonade come to mind. Growing up doesn’t mean so long to lemonade, though, it just means our lemonade needs to grow up too! This rosemary peppercorn version will surely incite our pallets.

4/20? Forget about it! 3/20 is the first day of Spring, which we  happen to think is much more exciting. Three cheers for warmer weather and colder cocktails!

April showers may bring May flowers but that doesn’t mean we’ll be kept from feeling warm and fuzzy through those rainy days. This citrus and fruity concoction will liven up our moods rain or shine (or hurricane)!

Sparkling Strawberry Lemonade (via Annie’s Eats)

More varieties of lemonade? We won’t pass that up! Strawberry Lemonade may just be a fancy way to say Pink Lemonade, but we’ll take it.

Watermelon Mojito Popsicles (via Rodelle Kitchen)

Who says boozy drinks can only come in liquid form? These watermelon mojito pops will help us fulfill our popsicle/ice cream cravings.

    Those popsicles look so very refreshing! As for spring cocktails I’m making-I just yesterday decanted beet infused vodka and made a cocktail with that and ginger syrup. It still needs tweaking but the beet vodka is absolutely stunning.
