Quick and Easy Recipe: Ravioli Toss

At least once a week there is a rush to put dinner together. Agree?

Some how the after work, after gym, after errands time goes into super speed mode and leaves us with little to no time to prep dinner let alone to think of a creative dish to serve. My menu board always includes a few quick and easy recipes to help out in times like these.  This is when the ravioli toss is put into action. I love this meal because it is fast and simple while letting me use up any vegetables that are about to hit the dust.

Truthfully, this Meal Share Monday is so simple it hardly counts as cooking, but it will be devoured by your family and you have every right to pat yourself on the back for a meal well (and quickly) made!

Here is what you need:
*Remember I normally cook for two so one package of ravioli is enough, but for a family I would do two. Adjust accordingly!

1 (9-ounce) package of whole-wheat ravioli in the flavor of your choice. Some of my favorites are spinach or four-cheese.
2-cups of cut green beans
1-cup of sliced mushrooms of any variety. I love baby bella!
1-cup of cherry tomatoes cut into halves
1-tablespoon of olive oil
1.5-tablespoons of red wine vinegar (I plan to incorporate my balsamic garlic mix from my Foodie Pen Pal package the next time I make this!)
2 garlic cloves, finely minced
1/4 cup of parmesan cheese (depending on what “theme” you go with you can change up your cheese. Feta or goat would be fabulous!)
A dash of salt and pepper to taste

Get cooking!  Boil your pot of water and cook your ravioli per the package ingredients. While the ravioli is cooking saute your garlic, green beans and mushrooms until lightly browned. Toss in the cherry tomatoes for the last thirty seconds. Put all of your sauteed ingredients into a bowl and mix with the olive oil and red wine vinegar.

After the ravioli is cooked and your veggies are mixed you combine them together and gently mix. Ravioli is a very tender pasta so I find it breaks easily. Usually adding half of the cooked ravioli at a time and slowly mixing with a rubber spatula keeps the pasta together.

Like I said, the best part about this meal is you can vary the vegetables and herbs that you put into the mix. Try  a combination of your favorites like squash, zucchini, and eggplant. Do a mix of peppers, Or go completely green with spinach, broccoli and asparagus. Really you can’t go wrong with your veggies of choice. Top with parmesan cheese and serve with garlic bread!

      Grab a smaller plate and dig in! Or, I like to immediately put a serving into a tupperware for my next day’s lunch. Out of site for the evening and out of my belly for the time being! I hope you love it is much as I do.

    I think eggs are probably my go to-lots of protein, lutein in the yolk, I believe, and a million ways to work in veggies and seasonings of choice
    But my favorite part of your simple recipe was the top with garlic bread part;)

      I agree that eggs are a versatile meal that can be a whole new experience depending on the veggies that are added in. Breakfast for dinner? I’m in! Perhaps instead of garlic bread we can swap for an english muffin. 🙂

    This looks like a great recipe. I will look for whole wheat ravioli now that our house has made the transition to whole grains including brown rice. Still don’t believe the brown rice deal.
