National Kale Day: Our Favorite Leafy Green 9 Ways

Calling all fitness and health freaks, it is National Kale Day! Yes, you heard right. It is the holy day where we all rejoice in our kale smoothies, salads, and baked goods. Wait, hold up. You can make baked good with kale? Indeed!

As a matter of fact, kale is incredibly versatile. Take a look at some of our favorite kale recipes from around the web, ranging from sweet to savory.

Interestingly enough, it’s not only National Kale Day, but it’s also National Vegetarian Day!  In order to stay true to both of these national (and glorious) holidays, we have decided that not only will these recipes involve heaps and bunches of kale, but also be completely meat-free, and (in some cases) even be completely animal product free.

    Those quesadillas look great! I like kale in an omelet although I confess I have a habit of substituting swiss chard for kale in recipes. It is another hearty green-just as healthy and it comes in a pretty red-stemmed variety I am fond of:)
