Cinco de Mayo is just around the corner and we don’t want you to jump off the healthy eating cliff in the name of the Battle of Puebla. Conquering the Mexican fare that will be presented to you on Sunday is no easy feat…unless you have a menu planned of better-for-you versions of the Mexican dish classics.
Since Mexican food is one of our faves, we couldn’t resist sharing our healthified menu in addition to our tips for having a healthy and festive Cinco de Mayo.
Lose the guilt and dig in.
No Mexican feast is complete without a guacamole starter. The antioxidant boost from the pomegranate seeds mixed in with the creamy, healthy fat ‘cado makes this guac a true winner—Cinco de Mayo celebration or not.
You definitely do not have to have a taco in hand when you celebrate Cinco de Mayo. In fact, we think you should opt for having a quesadilla. Particularly this one that is stuffed with sweet potato, black beans and kale, obviously.
Yes, healthy churros exist. The sweet, cinnamon-y treat created by Kym is miraculously butter-less, eggless and contains NO white sugar! The recipe is made up of Greek yogurt and, most surprisingly, a banana. This recipe is a must for Cinco de Mayo.
