Daily Bite [Make]: Carrot Cake Pancakes

The mere fact that carrots are a main ingredient in this breakfast from heaven makes the carrot cake pancakes healthier than the average gussied up pancake. The addition of vitamin rich raisins and walnuts in the batter makes it even better. And Jo-Anna added the nutritious chia seed into the mix too. Just use your portion control skills for the cream cheese drizzle and you are golden!

Get your spice cabinet ready for these flapjacks. Here is what you need:

  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ½ tsp grated fresh ginger
  • 1 egg
  • 2 tbsp brown sugar
  • 1 cup buttermilk
  • 1 tsp vanilla
  • 2 cups finely grated carrots
  • ¼ cup raisins (optional)
  • 1 tbsp chia seeds (optional)
  • chopped nuts (optional)

    Oooooh, I made a carrot cake pancake recipe from Joy the Baker’s cookbook once and they are tasty!
    I don’t know that I have a favorite recipe-sometimes l want plain, sometimes oatmeal, sometimes pumpkin…all served with cold maple syrup and butter.
