10 Yummy Vegetarian Recipes for World Vegetarian Day

Meatless Monday, Vegan Before 4, Vegan, Vegetarian, Plant-based? Whatever it is you’re giving a go (or not giving a go) make sure to take some time to appreciate World Vegetarian Day, which is tomorrow on October 1st! To celebrate we’ve rounded up some of the best vegetarian dishes from some of our very favorite vegetarian and vegan blogs. The recipes (and pictures) are drool-worthy and will have you wondering why you even bother with meat at all, right? Not only are these veggie-licious and veggie-friendly concoctions healthy, but some of them are actually spins on traditional “comfort food”. Hello, burgers for dinner anyone?

1. Mushroom Burgers with Asian Slaw via Sprouted Kitchen

Please, look at that burger and tell me it doesn’t look like you run-of-the-mill burger? This mushroom burger captures all the smokiness of a normal patty but loses all the fat. Coupled with some asian slaw and toasted buns, we probably couldn’t ask for a better burger recipe.

2. Warm Pasta Salad with Roasted Vegetables and Pesto Vinaigrette via FatFreeVegan

 

Pasta is probably one of the easiest ways to make a satisfying vegetarian meal. Some whole wheat (or gluten free) past mixed with vegetables and a protein source (chickpeas pictured here) and you’ve got a heartwarming bowl of deliciousness.

3. Moroccan Style Vegetable and Chickpea Stew via The First Mess

This Moroccan style stew is slightly reminiscent of chili, minus the meat. And, what can be more comforting than chili on an autumn night, right? Colder weather may be fast approaching but this stew recipe will surely keep us warm.

4. Heirloom BLT Salad (with Coconut Bacon!) via Cookie and Kate

Probably one of the things I (weirdly) crave the most now that I’m vegan is a good ol’ cobb salad. The combination of chicken, bacon, avocado, and all the other fixings is almost enough to make me tear up. That being said, there are plenty of meat-less options that evoke that bacon-y texture. While I’ve had onion strips deep fried and made to look like bacon, this recipe makes it that much healthier by using coconut!

5. Black Bean Taquitos via Naturally Ella

Tacos are so so hard when you’re vegan/vegetarian. Faux-meat is weird, you can’t have chicken or beef. and you don’t really want to eat lettuce on a tortilla, do you? These black bean taquitos will solve all your problems.

6. Kale Fried Rice via Herbivoracious

Probably on of the simplest vegetarian dishes. Rice, kale (or green of choice) and dippy egg on top. Voila! If you don’t eat eggs, omit and add in either a bean of your choice or tofu.

7.  White Bean Dip Sandwich Spread via OhMyVeggies

Sandwiches face the same problem as tacos do (read above). However, not to worry this white bean dip is sure  to elevate that veggie sammich while filling you up.

8. Hummus Tortilla Pizza via Plant Powered Kitchen

Oh, Pizza, you are so good to us even in the worst of times. This healthy version will have you wishing it would never end. Simply toast up some pita, spread hummus on top, and sprinkle with roasted veggies. You’ll probably want to have this at every meal.

9. Falafel via Minimalist Baker

Falafel is one of the most vegetarian friendly recipes out there, and not to mention one of the tastiest. Douse in some tahini and hot sauce and you’re good to go.

10. Tofu Broccoli (& Asparagus) via Love & Olive Oil

 

Tofu lover? Here’s a great way to incorporate it into dinner while adding some new flavors. Simple but yummy.
