Daily Bite [Make]: Lemon Mint Snap Peas and Lima Beans Salad

What first drew us to this recipe was the picture of this gorgeous, bright green, spring salad. The health benefits of the ingredients make us even more excited to try the recipe out for ourselves!

Snap peas are full of fiber and high in vitamin c, while remaining low in calories to benefit the digestive and immune system. Lima beans are rich in protein, iron, and manganese to help in the healthy development of muscles and bones. This salad would be a perfect dish for a spring luncheon or dinner party!

Lemon Mint Snap Peas and Lima Beans Salad

1 small shallot, minced
2 tablespoons extra-virgin olive oil
2 tablespoons lemon juice
2 tablespoons chopped fresh mint
1 teaspoon Dijon mustard
1 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
1 pound sugar snap peas, trimmed
10 ounces frozen baby lima beans, thawed
