What we love about this baked oatmeal recipe from Skinny Taste is that you can make it at night and enjoy it throughout the week to start each workday off on the healthy foot.
Check out these ingredients: blueberries, bananas and oatmeal. Blueberries have the highest amount of antioxidants of all fruits and boost your immune system to prevent illness. Bananas are full of potassium which is beneficial for optimum muscle and nerve function. Last but not least, oatmeal has a large amount of soluble fiber and healthy carbohydrates to keep you full all day long.

- 2 medium ripe bananas, (the riper the better) sliced into 1/2″ pieces
- 1 1/2 cup blueberries
- 1/4 cup honey (or agave)
- 1 cup uncooked quick oats
- 1/4 cup chopped walnuts or pecans
- 1/2 tsp baking powder
- 3/4 tsp cinnamon
- pinch of salt
- 1 cup fat free milk (or any milk you desire)
- 1 egg
- 1 tsp vanilla extract
