Artichokes are one of the yummiest vegetables around, but they can be pretty intimidating if you don’t know what to do with them! The leaves and stringy parts on the inside may throw you off, but the central heart of the vegetable is where you’re going to find the good stuff! They provide a good source of magnesium to improve bone health and energy production, they are full of antioxidants to help cells repair from damage and reduce inflammation, and the fiber in the vegetable will help cardiovascular and digestive health.

This amazing recipe for artichoke fries is delicious for everybody at your table. (you can take our word for it, they are amazing!) And with the amount of nutrition they provide, you’ll feel good about giving your family the vitamins and minerals they need.

Ingredients:
1/2 pound frozen artichoke bottoms
1/2 teaspoon minced lemon zest
1 1/2 teaspoons fresh lemon juice
1/4 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
1 tablespoon grated parmesan cheese
1/2 teaspoon garlic granules
2 teaspoons extra virgin olive oil

    Yea! I adore artichokes-especially when I don’t have it deal with breaking them down and can get them prechopped like in this recipe. Although once in a while they are worth the chopping too:)
