If you didn’t know, National Watermelon Day happened over the weekend (on Saturday to be exact). That is correct, National Watermelon Day is on August 3rd. And, even though it sometimes feels like there is a food holiday everyday of the week (there is), we won’t complain. What else is supposed to give us inspiration when we prepare meals ?

We can’t even begin to list the benefits of watermelon. Not only is it incredibly low-cal and delicious, but also has proven to be hydrating, rich in potassium, vitamin C, antioxidants, and even lycopene! What is lycopene exactly? Research indicates that lycopene is helpful in reducing the risk of several types of cancers such as prostate, breast, lung, and even colon. With this kind of information, who wouldn’t love watermelon? Not to mention how much it reminds us of summer…

While were advocates of a good ol’, no fuss watermelon to spoon out of – preferably at the beach – we think it’s time to try something new. Have you ever had a savory watermelon salad? It’s just the right amount of sweet and salty, making sure your refreshed and satisfied.

Try this Watermelon Salad with Basil, Ricotta, and Red Onion. You won’t regret it! The best part? How easy it is to make!

Ingredients:

1 small seedless watermelon, diced
1/3 cup ricotta salata, freshly grated
½ small red onion, thinly sliced into half moons
1 cup basil leaves, roughly torn
kosher salt and fresh cracked pepper to taste
2 tsp. balsamic vinegar
juice of ½ lime
2½ tbsp. extra virgin olive oil
